For Marinating the Duck Eggs

    Prepare the Marinade

    In a saucepan, combine soy sauce, rice vinegar, water, star anise, cinnamon stick, sugar, and black peppercorns. Heat over medium heat until the sugar dissolves. Remove from heat and let it cool.

    Prepare the Duck Eggs

    Bring a pot of water to a boil and gently lower the duck eggs into the boiling water. Boil for about 6-7 minutes for a soft yolk. Remove from heat and transfer eggs to an ice bath to cool quickly.

    Peel and Marinate

    Once cooled, carefully peel the duck eggs and place them in a glass jar. Pour the cooled marinade over the eggs, ensuring they are fully submerged. Seal the jar and refrigerate for at least 24 hours.
