Prepare the Oysters
Carefully shuck the fresh oysters, discarding the top shell and reserving the bottom shell with the oyster inside. Place the oysters on a bed of ice to keep them chilled.

Make the Gelée
In a small saucepan, combine the dry white wine, finely chopped shallots, salt, and freshly cracked black pepper. Bring to a simmer over medium heat and let it reduce by half.

Soften the Gelatin
Soak the gelatin sheets in cold water for about 5-10 minutes until soft. Once softened, remove them from the water and squeeze out any excess moisture.

Combine Ingredients
Remove the saucepan from heat and add the softened gelatin to the wine mixture. Stir until the gelatin is completely dissolved. Then, add the fresh lemon juice and mix well.

Set the Gelée
Pour the mixture into a shallow dish and place it in the refrigerator. Allow it to set for at least 2 hours or until firm.

Once the gelée is set, cut it into small cubes. To serve, place a cube of gelée on each chilled oyster and garnish with chopped fresh chives. Enjoy immediately.
