Select Fresh Oysters
Choose 12 fresh oysters from a reliable source, preferably from the Puget Sound region for optimal flavor.

Shucking the Oysters
Using an oyster knife, carefully insert the blade into the hinge of each oyster and twist to open. Slide the knife along the shell to cut the muscle attaching the oyster to the shell.

Cleaning the Oysters
Once opened, check for any shell fragments. Rinse the oysters under cold water to remove any debris.

Serving the Oysters
Arrange the shucked oysters on a platter, preferably on a bed of crushed ice to keep them chilled. Serve with lemon wedges, hot sauce, horseradish, and sea salt on the side.
