Salad Preparation

Prepare Chicory Leaves
Wash and dry the chicory leaves thoroughly. Tear them into bite-sized pieces and place them in a large salad bowl.

Add Cherry Tomatoes
Cut the cherry tomatoes in half and add them to the bowl with chicory.

Grate or shave the Parmesan cheese and sprinkle it over the salad.

Finely chop the Calabrian anchovies and add them to the salad.

Chop the fresh parsley and sprinkle it on top of the salad for garnish.

Slice the baguette into 1-inch cubes.

In a small bowl, combine olive oil, minced garlic, salt, and black pepper.

Spread the croutons on a baking sheet and bake at 375°F (190°C) for 10-15 minutes, or until golden brown and crispy.
