    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the water and pat the potatoes dry with a clean kitchen towel.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, frying for about 5-7 minutes or until golden brown.

    Remove the fries from the oil and place them on paper towels to drain excess oil. Season with salt, black pepper, and paprika while still hot.
