Crust and Filling

Method

Preparation

  1. 1

    Make the Pretzel Crust

Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the pretzel crumbs, melted butter, brown sugar, and sea salt. Mix until well combined. Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish. Bake for 10 minutes, then remove from the oven and let cool completely.

  2. 2

    Prepare the Huckleberry Glaze

In a saucepan over medium heat, combine the huckleberries, sugar, and lemon juice. Cook until the mixture comes to a simmer and the berries break down, about 10 minutes. Remove from heat and let cool slightly, then strain to remove seeds if desired. Set aside.

  3. 3

    Whip the Cream

In a large mixing bowl, whip the heavy cream and vanilla extract until stiff peaks form. Gently fold in half of the huckleberry glaze into the whipped cream.

  4. 4

    Assemble the Pie

Spread the whipped cream mixture into the cooled pretzel crust. Drizzle the top with salted caramel sauce and then pour the remaining huckleberry glaze over the top. Use a spatula to swirl the glaze into the cream slightly for a marbled effect.

  5. 5

    Chill and Serve

Refrigerate the pie for at least 4 hours or until set. Serve chilled and enjoy your delicious huckleberry ice cream pie!
