French Onion Soup

    Prepare the Onion Soup

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized, about 30-40 minutes.

    Add Liquid Ingredients

    Once the onions are caramelized, add the white wine, beef broth, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for another 20 minutes.

    Prepare the Croutons

    While the soup is simmering, preheat the oven to 375°F (190°C). Cut the French baguette into cubes and toss with olive oil and garlic powder. Spread on a baking sheet and bake for 10-12 minutes until golden.

    Assemble the Soup

    Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, place the croutons on top, and sprinkle with Havarti, provolone, and parmesan cheese.

    Broil

    Place the bowls under the broiler for 2-3 minutes, or until the cheese is melted and bubbly. Serve hot.
