    Prepare the Jalapeños

    Preheat your oven to 375°F (190°C). Slice the jalapeños in half lengthwise and remove the seeds and membranes for a milder flavor. Set aside.

    Make the Filling

    In a mixing bowl, combine cream cheese, shredded cheddar cheese, diced green onions, spicy paprika, garlic powder, black pepper, and salt to taste. Mix until well combined.

    Stuff the Jalapeños

    Using a spoon, fill each jalapeño half with the cheese mixture, packing it in well.

    Wrap with Pancetta

    Take a slice of pancetta and wrap it around each stuffed jalapeño, securing it with a toothpick if necessary.

    Bake

    Place the wrapped jalapeños on a baking sheet and bake in the preheated oven for about 20-25 minutes, or until the pancetta is crispy and the cheese is melted.

    Prepare the Spiced Cream Sauce

    In a small bowl, mix together the sour cream and additional spices (optional) to taste. Adjust seasoning as desired.
