    Prepare the Grits

    In a medium pot, bring 4 cups of water or chicken broth to a boil. Gradually whisk in the corn grits, reduce heat to low, and cook for about 20-25 minutes until thickened, stirring occasionally.

    Add Cheese

    Once the grits are cooked, stir in the butter and cheddar cheese until melted and creamy. Season with salt and pepper to taste. Keep warm.

    Cook the Shrimp

    In a large skillet, heat olive oil over medium heat. Add the diced Tasso ham and cook until slightly crispy. Add the minced garlic, Cajun seasoning, and cayenne pepper, and sauté for about 1 minute.

    Add Shrimp

    Add the shrimp to the skillet and cook for 3-4 minutes until they turn pink and opaque. Pour in the chicken broth and heavy cream, and let it simmer for about 5 minutes, allowing the sauce to thicken. Adjust seasoning with salt and pepper.

    Cook the Eggs

    In a separate pan, fry the eggs sunny-side up or over easy, according to your preference.

    To serve, place a generous scoop of cheese grits on a plate, top with the spicy shrimp and sauce, and place an egg on top. Garnish with sliced green onions.
