    Prepare the Couscous

    In a saucepan, bring 1.5 cups of water to a boil. Stir in the couscous and a pinch of salt. Remove from heat, cover, and let it sit for 5 minutes. Fluff with a fork before serving.

    Prepare the Haricot Vert

    In a pot of boiling salted water, blanch the haricot vert for 2-3 minutes until bright green and tender-crisp. Drain and immediately plunge into ice water to stop cooking. Drain again and set aside.

    Prepare the Salmon

    Preheat the oven to 375°F (190°C). In a bowl, mix the apricot preserves, lemon juice, salt, and black pepper. Place the salmon filets on a baking sheet lined with parchment paper. Brush the apricot glaze generously over each filet.

    Bake the Salmon

    Bake the salmon in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

    Sauté the Red Onion

    In a skillet, heat the olive oil over medium heat. Add the sliced red onion and sauté for about 5 minutes until they become soft and translucent.

    Assemble the Dish

    On each plate, serve a portion of couscous topped with the sautéed red onion, followed by the baked apricot salmon. Arrange the haricot vert on the side.
