Method
Cooking Instructions
- 1
Cook the Pasta
In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
- 2
Cook the Bacon
In a large skillet, heat olive oil over medium heat. Add the diced bacon and cook until crispy, about 5-7 minutes. Remove excess fat if necessary.
- 3
Make the Cream Sauce
Add minced garlic to the skillet with the bacon and sauté for 1 minute until fragrant. Pour in the heavy cream and bring to a simmer. Let it cook for 3-4 minutes until slightly thickened.
- 4
Combine Pasta and Sauce
Add the drained pasta to the skillet and toss to combine with the sauce. If the sauce is too thick, add some reserved pasta water to reach desired consistency.
- 5
Add Arugula and Season
Stir in the fresh arugula and cook for an additional 1-2 minutes until wilted. Season with salt and black pepper to taste.
- 6
Serve
Plate the pasta and sprinkle with grated Parmesan cheese before serving.
