Prepare the Aioli
In a small bowl, combine mayonnaise, smoked paprika, minced garlic, lemon juice, salt, and black pepper. Mix well and set aside.

Grill the Chicken
Season the chicken breasts with salt and pepper. Preheat a grill or grill pan over medium-high heat. Grill the chicken for about 6-7 minutes on each side or until fully cooked and juices run clear. Allow to rest for a few minutes before slicing.

Assemble the Sandwich
Spread a generous amount of the smoked paprika aioli on both sides of the sandwich rolls. Place a slice of grilled chicken on the bottom half, top with pepper jack cheese, fresh spinach, and pickled red onion. Close the sandwich with the top half of the roll.

Grill the Sandwich
If desired, place the assembled sandwich on the grill or in a panini press for 2-3 minutes until the cheese is melted and the bread is toasted.

Serve
Cut the sandwich in half and serve immediately with extra aioli on the side if desired.
