Prepare the Goat Cheese Bites
Preheat the oven to 375°F (190°C). In a bowl, mix the goat cheese with fresh thyme, salt, and pepper. Form the mixture into small balls (about the size of a tablespoon).

Coat the Cheese Bites
Beat the eggs in a shallow bowl. Place the panko breadcrumbs in another shallow bowl. Dip each goat cheese ball into the egg, then roll in panko breadcrumbs until fully coated.

Bake the Cheese Bites
Place the coated cheese bites on a baking sheet lined with parchment paper. Drizzle with olive oil and bake for 15-20 minutes, or until golden brown.

Make the Berry Sauce
In a small saucepan, combine the mixed berries, honey, and balsamic vinegar. Cook over medium heat until the berries break down and the sauce thickens slightly (about 5-7 minutes).

On a plate, create a bed of arugula. Top with the goat cheese bites and drizzle with the berry sauce before serving.
