Make the Biscuits
Preheat the oven to 450°F (230°C). In a mixing bowl, combine the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk just until combined. Turn the dough onto a floured surface and knead gently. Roll out to about 1-inch thick and cut into rounds. Place on a baking sheet and bake for 12-15 minutes until golden brown.

Prepare the Sausage Gravy
In a skillet, cook the ground sausage over medium heat until browned and cooked through. Sprinkle the flour over the sausage and stir to combine. Gradually add in the milk, stirring constantly until the gravy thickens. Season with black pepper and salt to taste.

Serve
Split the biscuits in half and spoon the sausage gravy over the top. Serve warm.
