Prepare the Crust
Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and melted butter until well mixed. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes and then allow to cool.

Make the Cheesecake Filling
In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add the vanilla extract and mix well. Add eggs one at a time, mixing on low speed after each addition until just combined. Gently fold in the pureed roasted strawberries.

Bake the Cheesecake
Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

Chill and Serve
Refrigerate the cheesecake for at least 4 hours, or overnight for best results. Before serving, drizzle with balsamic caramel and basil gel for garnish.
