Gateau Basque Ingredients

Method

Gateau Basque Directions

  1. 1

    Prepare the Pastry Cream

In a saucepan, combine milk, sugar, and vanilla extract. Heat until warm. In a bowl, whisk together eggs and flour. Gradually add the warm milk mixture to the egg mixture, then return to the saucepan. Cook over medium heat until thickened. Set aside to cool.

  2. 2

    Make the Cake Batter

In a large mixing bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then mix in vanilla extract. In another bowl, combine flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture alternately with milk, starting and ending with the flour mixture.

  3. 3

    Assemble the Gateau Basque

Preheat the oven to 350°F (175°C). Grease a round cake pan. Spread half of the cake batter into the bottom of the pan. Layer the vanilla pastry cream over the batter, followed by the tart cherry preserves. Spread the remaining cake batter on top.

  4. 4

    Bake the Cake

Bake in the preheated oven for 35-40 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  5. 5

    Finish and Serve

Once cooled, garnish with candied orange peel. Slice and serve at room temperature.
