    Gently rinse the pears. Peel if desired, but leave the stems on; core from the bottom to remove seeds while keeping the pears intact.

    In a wide, heavy-bottom saucepan, combine the red wine, sugar, cinnamon stick, and orange zest. Bring to a steady simmer over medium heat, stirring until the sugar dissolves.

    Carefully place the pears in the simmering wine, ensuring they are mostly submerged. Poach at a gentle simmer for 20–25 minutes, turning the pears halfway, until tender but still hold their shape.

    Using a slotted spoon, transfer the pears to a warm plate. Increase the heat to medium-high and simmer the poaching liquid until it reduces to a syrup, about 10–15 minutes.

    Remove the saucepan from the heat and whisk in the chopped dark chocolate until completely melted and the sauce is glossy. If desired, whisk in a pinch more sugar to balance the wine's acidity.
