Gently rinse the pears. Peel if desired, but leave the stems on; core from the bottom to remove seeds while keeping the pears intact.

Carefully place the pears in the simmering wine, ensuring they are mostly submerged. Poach at a gentle simmer for 20–25 minutes, turning the pears halfway, until tender but still hold their shape.

Using a slotted spoon, transfer the pears to a warm plate. Increase the heat to medium-high and simmer the poaching liquid until it reduces to a syrup, about 10–15 minutes.

Return the pears to the serving dish, spoon over warm chocolate sauce, and garnish with mint leaves. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream.
