Prepare pears
Peel the pears, leave the stems intact, and core them to remove the seeds. Keep the stems as a natural handle for serving.
Make poaching liquid
In a wide, deep saucepan, combine the red wine, granulated sugar, cinnamon stick, star anise, and lemon juice. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves.
Poach the pears
Gently stand the pears upright in the simmering liquid. Reduce heat to just below a simmer and poach until the pears are tender but still firm, about 15–25 minutes. Turn pears occasionally for even color.
Reduce the poaching liquid
Carefully lift the pears from the liquid and keep warm. Increase heat and simmer the liquid until it reduces to a light syrup, about 10–15 minutes. If you prefer a clearer syrup, strain before serving.
Make chocolate sauce
In a small saucepan or microwave-safe bowl, melt the dark chocolate chips with the heavy cream, stirring until smooth and glossy. Keep warm.
Serve
Arrange the poached pears on dessert plates, drizzle with the reduced poaching syrup, and spoon warm chocolate sauce over or beside the pears. Optional: add a dollop of whipped cream or a scoop of vanilla ice cream.
