Prepare oven and pan
Preheat the oven to 350°F (175°C). Grease and line a 9x13-inch baking pan with parchment paper.

Fold whites into yolk mixture
Gently fold about a third of the beaten egg whites into the yolk mixture to lighten, then fold in the remaining whites until just incorporated.

Add the flour mixture to the batter in two additions, folding gently until just combined.

Pour batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cake cool completely on a rack.

In a large measuring cup, whisk together evaporated milk, sweetened condensed milk, and heavy cream (for soaking).
