    Wash and scrub the Russet potatoes to remove any dirt. Pat them dry with a towel.

    Using a mandoline or a sharp knife, slice the potatoes very thinly, about 1/8 inch thick.

    Soak the Potatoes

    Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and crisp them up.

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
