Method
Dough Preparation
Activate Yeast
In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
Mix Ingredients
In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the activated yeast mixture and olive oil. Mix until a shaggy dough forms.
Knead Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.
First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm area until doubled in size, about 1 hour.
Baking
Prepare Baking Sheet
Preheat the oven to 425°F (220°C). Grease a baking sheet with olive oil.
Shape Dough
Punch down the risen dough and transfer it to the greased baking sheet. Stretch the dough to fit the sheet, creating dimples with your fingers.
Add Toppings
Drizzle olive oil over the dough, sprinkle with fresh rosemary, coarse sea salt, and arrange halved cherry tomatoes on top.
Second Rise
Let the dough rise again for about 20-30 minutes while the oven is preheating.
Bake
Bake the focaccia in the preheated oven for 20-25 minutes until golden brown.
Cool and Serve
Remove from the oven, let it cool for a few minutes, then slice and serve warm.
