Slice the Ingredients
Slice the ciabatta bread in half horizontally. Cut the heirloom tomato into thick slices.

Assemble the Panini
On the bottom half of the ciabatta, layer the fior di latte cheese, followed by the heirloom tomato slices, and then top with marinated olives.
Cooking

Grill the Panini
Close the sandwich with the top half of the ciabatta bread. Grill on a panini press or in a skillet over medium heat for about 5-7 minutes, or until the bread is golden and crispy and the cheese has melted.

Remove from heat, let cool for a minute, then slice in half and serve warm.
