Prepare the Caramelized Onions

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and salt, and cook, stirring occasionally, until they are soft and caramelized, about 15-20 minutes. Remove from heat and set aside.

Sauté the Mushrooms

In the same skillet, add the remaining tablespoon of olive oil and add the sliced mushrooms. Cook for about 5-7 minutes until they are browned and any moisture has evaporated. Season with salt and black pepper. Remove from heat.

Preheat the Oven

Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat up.

Assemble the Pizza

Roll out the pizza dough on a floured surface to your desired thickness. Transfer to a pizza peel or baking sheet. Spread the caramelized onions evenly over the dough, followed by the sautéed mushrooms. Sprinkle the crumbled gorgonzola cheese and chopped rosemary on top.

Bake the Pizza

Carefully slide the pizza onto the preheated pizza stone or place the baking sheet in the oven. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly.

Serve

Remove the pizza from the oven and allow it to cool for a couple of minutes. Slice and serve hot.
