    Prepare the Vegetables

    Clean and slice the maitake mushrooms into bite-sized pieces. Trim the asparagus and cut into 2-inch pieces. Peel and slice the sunchokes thinly. Cut the cippolini onions into halves or quarters, depending on their size.

    Sauté the Onions

    In a large skillet, heat the olive oil over medium heat. Add the cippolini onions and sauté for about 5 minutes until they become translucent and slightly caramelized.

    Cook the Sunchokes

    Add the sliced sunchokes to the skillet and cook for an additional 5-7 minutes until they start to soften.

    Add Asparagus and Mushrooms

    Stir in the asparagus and maitake mushrooms, cooking for about 8-10 minutes until the mushrooms are golden brown and the asparagus is tender but still crisp.

    Season and Serve

    Season the mixture with salt and black pepper to taste. Drizzle the zhoug sauce over the top and toss gently to combine. Serve warm.
