Prepare and Cook the Chicken
Marinate the Chicken
In a large bowl, combine the olive oil, minced garlic, preserved lemons, thyme, salt, and black pepper. Add the chicken halves, ensuring they are well coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight.
Cook the Chicken
Preheat your oven to 400°F (200°C). Place the marinated chicken halves in a roasting pan and roast for 45-50 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
Prepare the Saffron Jus
Make the Jus
In a small saucepan, bring the chicken broth to a simmer. Add the saffron threads and let them steep for about 15 minutes. Stir in the sliced olives and lemon juice. Reduce the heat and whisk in the butter until melted and smooth.
