Gnocchi Preparation

    Make the Gnocchi Dough

    In a large mixing bowl, combine ricotta cheese, egg, and salt. Gradually add the flour until a soft dough forms. Knead gently on a floured surface until smooth. Divide into smaller portions.

    Shape the Gnocchi

    Roll each portion of dough into a long rope, about 1/2 inch thick. Cut into 1-inch pieces and use a fork to create ridges on each piece. Place on a floured baking sheet.

    Cook the Gnocchi

    Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add chopped mushrooms and cook until browned, about 5 minutes. Add spring peas and cook for an additional 2 minutes.

    Combine and Serve

    Add the cooked gnocchi to the skillet with mushrooms and peas. Toss gently to combine. Sprinkle with grated Grana Padano cheese and season with black pepper to taste. Serve warm.
