Waffle Preparation

Make the Waffle Batter

In a large bowl, whisk together the flour, sugar, baking powder, cocoa powder, and salt. In another bowl, mix the milk, melted butter, and eggs. Combine the wet ingredients with the dry ingredients, then gently fold in the chopped hazelnuts and melted gianduja chocolate.

Cook the Waffles

Preheat your waffle maker. Pour the batter into the waffle maker and cook according to the manufacturer's instructions until golden brown and crispy.

Sour Cherry Compote Preparation

Prepare the Compote

In a saucepan over medium heat, combine the sour cherries, sugar, and lemon juice. Cook until the cherries have softened and the mixture has thickened, about 10-15 minutes. Remove from heat and let cool.

Hazelnut Praline Preparation

Make the Praline

In a saucepan over medium heat, melt the sugar until it turns a golden amber color. Add the hazelnuts and stir to coat. Pour onto a parchment-lined baking sheet and let cool. Once hardened, break into pieces.

Vanilla Chantilly Preparation

Prepare the Chantilly

In a bowl, whisk the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Keep refrigerated until ready to serve.

Assembly

Serve the Waffles

Serve the warm waffles topped with sour cherry compote, a dollop of vanilla chantilly, and sprinkle with hazelnut praline.
