Preparation
Prepare the Beans
Trim the ends of the French beans and wash them thoroughly. Set aside.
Prepare the Cheese and Currants
Grate the Pecorino Romano cheese and rinse the red currants. Set aside.
Cooking
Cook the Beans
In a pot of boiling salted water, add the French beans and cook for about 4-5 minutes or until tender but still crisp. Drain and immediately place them in ice water to stop the cooking process.
Combine Ingredients
In a large bowl, mix the cooked French beans with olive oil, za’atar, salt, and black pepper. Toss to combine.
Add Cheese and Currants
Gently fold in the grated Pecorino Romano cheese and the red currants into the French bean mixture.
Serving
Serve
Transfer the French beans to a serving dish. Drizzle with additional olive oil if desired and garnish with extra Pecorino Romano cheese on top. Enjoy!
