Activate the yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix the dough

In a large mixing bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a shaggy dough forms.

Knead the dough

Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

First rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the focaccia

Once risen, punch down the dough and transfer to a greased baking sheet. Stretch and press the dough to fit the sheet.

Second rise

Cover the dough with a damp cloth again and let it rise for about 30 minutes.

Add toppings

Preheat the oven to 425°F (220°C). Make dimples in the dough with your fingers, drizzle with olive oil, and sprinkle with coarse salt and herbs of your choice.

Bake

Bake in the preheated oven for 20-25 minutes until golden brown. Let cool slightly before slicing.
