Preparation of Dough

Activate Yeast

In a small bowl, mix warm water and active dry yeast. Let it sit for about 5 minutes until frothy.

Make Dough

In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Knead until smooth and elastic, about 10 minutes.

Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Assembling and Baking

Preheat Oven

Preheat your oven to 220°C (428°F).

Shape Dough

Once the dough has risen, punch it down and divide it into 4 equal parts. Roll each part into a circular shape about 8 inches in diameter.

Add Toppings

Spread a layer of garlic puree on each round of dough. Crumble the stracchino cheese evenly on top and sprinkle with za’atar. Make small wells in the mixture to crack the eggs into.

Bake

Transfer the prepared manakeesh to a baking tray and bake in the preheated oven for about 12-15 minutes, or until the edges are golden and the eggs are set.
