Dough Preparation
Activate Yeast
In a small bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy.
Mix Dough
In a large bowl, mix flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a dough forms.
Knead Dough
Turn the dough out onto a floured surface and knead for about 10 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm area for 1 hour.
Pizza Assembly
Preheat Oven
Preheat your oven to 475°F (245°C) and place a pizza stone inside if you have one.
Prepare Guanciale
Slice the guanciale into small strips and cook in a skillet over medium heat until crispy. Remove and drain on paper towels.
Roll Out Dough
Once the dough has risen, punch it down and roll it out into a round shape on a floured surface.
Add Toppings
Transfer the rolled dough to a pizza peel or baking sheet. Sprinkle half of the pecorino cheese, add the crispy guanciale, and top with the remaining cheese and cracked black pepper.
Bake Pizza
Bake in the preheated oven for about 10-12 minutes until the crust is golden and cheese is bubbling.
Poach Eggs
While the pizza is baking, poach the eggs in simmering water for about 3-4 minutes until the whites are set but the yolks remain runny.
Serve
Once the pizza is done, remove it from the oven and top with poached eggs. Season with extra black pepper and serve immediately.
