Pickled Cherry

Method

Pickling the Cherry Tomatoes

  1. 1

    Prepare the Pickling Solution

In a saucepan, combine white vinegar, sugar, salt, and water. Bring to a boil over medium heat, stirring until sugar and salt are dissolved.

  2. 2

    Pickle the Tomatoes

Place cherry tomatoes in a heatproof jar and pour the hot pickling solution over them. Let cool to room temperature, then cover and refrigerate for at least 2 hours or overnight.

Assembling the Dish

  1. 3

    Prepare the Heirloom Tomatoes

Chop the heirloom tomatoes into bite-sized pieces and place them on a serving plate.

  2. 4

    Add the Burrata

Place the burrata cheese in the center of the heirloom tomatoes.

  3. 5

    Finish with Pickled Cherries

Remove the pickled cherry tomatoes from the refrigerator and drain them. Scatter the pickled cherries around the burrata and heirloom tomatoes.

  4. 6

    Garnish and Serve

Drizzle olive oil over the dish, sprinkle with fresh oregano leaves, and season with salt and black pepper to taste. Serve immediately.
