Method

Preparation of Boxty

    Prepare Potatoes

    Grate the Russet potatoes and squeeze out excess moisture using a clean kitchen towel.

    Mix Ingredients

    In a large bowl, combine grated potatoes, flour, baking powder, salt, egg, and milk. Mix until well combined.

    Cook Boxty

    In a large skillet, melt butter over medium heat. Pour batter into the skillet, forming pancakes. Cook for about 4-5 minutes on each side until golden brown.

Sautéed Vegetables

    Sauté Vegetables

    In another skillet, heat olive oil over medium heat. Add bell pepper, zucchini, and onion. Sauté until vegetables are tender, about 5-7 minutes.

Pesto Mayo

    Mix Pesto Mayo

    In a small bowl, combine mayonnaise and pesto sauce. Stir until smooth.

Optional Protein

    Cook Protein

    If adding salmon or chicken, cook in a skillet over medium heat until fully cooked, about 5-7 minutes for salmon and 7-10 minutes for chicken, depending on thickness.

House Salad

    Prepare Salad

    In a bowl, combine mixed greens, cherry tomatoes, and cucumber. Drizzle with olive oil and balsamic vinegar. Toss to combine.

Serving

    Plate the Dish

    Serve the boxty topped with sautéed vegetables and a dollop of pesto mayo, alongside the house salad.
