Prepare the Pulled Pork
Rub the pork shoulder with salt, black pepper, garlic powder, and onion powder. Heat olive oil in a large skillet over medium-high heat and sear the pork on all sides until browned.

Cook the Pork
Transfer the seared pork to a slow cooker. Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Make the BBQ Sauce
In a saucepan, combine Guinness, Jameson, ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, mustard powder, and black pepper. Simmer over medium heat for 20 minutes until thickened.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix shredded pork with the BBQ sauce.

Prepare the Coleslaw
In a large bowl, combine shredded cabbage and carrots. In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour the dressing over the cabbage mixture and toss to combine.

Serve the BBQ pulled pork on a bun with a generous helping of coleslaw on the side.
