Preheat Oven
Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.

Prepare Bread
In a large bowl, tear the stale bread into bite-sized pieces and place them in the greased baking dish.

Mix Custard
In another bowl, whisk together the milk, cream, granulated sugar, brown sugar, eggs, vanilla extract, cinnamon, and salt until well combined.

Combine
Pour the custard mixture over the bread pieces in the baking dish. Gently push down the bread to soak up the custard.

Add Pecans
Sprinkle the chopped pecans on top of the bread mixture.

Bake
Bake in the preheated oven for 45-50 minutes, or until the pudding is set and the top is golden brown.

Serve
Remove from the oven and allow to cool slightly before serving warm with bourbon caramel sauce and a scoop of ice cream.
