    Prepare the Burger Patties

    In a mixing bowl, combine the ground brisket and ground chuck. Season with salt and black pepper, mixing until just combined. Form the mixture into two equal-sized patties.

    Cook the Bacon

    In a skillet over medium heat, cook the peppered bacon until crispy. Remove and place on paper towels to drain excess fat.

    Grill the Burger Patties

    In the same skillet or on a grill, cook the burger patties over medium-high heat for about 4-5 minutes on each side, or until they reach your desired doneness. During the last minute of cooking, place a slice of cheddar cheese on each patty to melt.

    Assemble the Burgers

    Toast the burger buns lightly. On the bottom half of each bun, layer the BBQ sauce, the cheesy burger patty, crispy bacon, and crispy fried onions. Top with the other half of the bun.
