    Prepare the Batter

    In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and sugar. Mix well.

    Add Ingredients

    Stir in the diced jalapeno, shredded pepper jack cheese, sweet corn, and lump crab meat into the dry mixture.

    Combine Wet Ingredients

    In a separate bowl, combine the beaten egg and milk. Pour this mixture into the dry ingredients and mix until just combined. Do not overmix.

    Heat the Oil

    In a deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Hushpuppies

    Using a spoon or small ice cream scoop, carefully drop spoonfuls of the batter into the hot oil. Fry in batches, being careful not to overcrowd the pot.

    Cook Until Golden

    Fry the hushpuppies for about 3-4 minutes on each side or until they are golden brown. Remove them with a slotted spoon and drain on paper towels.
