In a bowl, soak the chicken breasts in buttermilk for at least 1 hour, or overnight for best results.

Bread the Chicken
In a separate bowl, mix flour, cornstarch, salt, black pepper, paprika, and garlic powder. Remove chicken from buttermilk and dredge in the flour mixture until fully coated.

Fry the Chicken
Heat oil in a deep pan over medium-high heat. Fry the chicken for about 6-8 minutes on each side or until golden brown and cooked through. Drain on paper towels.

Prepare the Hot Honey
In a small saucepan, heat the hot honey over low heat until warm.

Make the Coleslaw
In a bowl, mix coleslaw mix with mayonnaise until evenly coated. Season with salt and pepper to taste.

Cut the potatoes into cubes, season with salt, and fry in the same oil until golden and crispy, about 10-12 minutes.
