Preparing the Meatloaf

    Preheat and Soak

    Preheat your smoker to 250°F (120°C) and soak hickory wood chips in water for at least 30 minutes.

    Mix Ingredients

    In a large bowl, combine ground brisket, ground beef, chopped onion, minced garlic, breadcrumbs, eggs, barbecue sauce, Worcestershire sauce, salt, pepper, and smoked paprika. Mix until well combined.

    Form the Loaf

    Shape the mixture into a loaf and place it on a smoker-safe pan.

    Smoke the Meatloaf

    Add the soaked hickory wood chips to your smoker. Place the meatloaf in the smoker and cook for about 2 to 2.5 hours, or until the internal temperature reaches 160°F (70°C).

Cooking the Green Beans

    Sauté Beans

    In a skillet, heat olive oil over medium heat. Add trimmed green beans and sauté for about 5-7 minutes until tender. Season with salt and pepper to taste.

Making Whipped Potatoes

    Boil Potatoes

    In a large pot, boil peeled and cubed potatoes in salted water until tender, about 15-20 minutes.

    Whip Potatoes

    Drain the potatoes and return to the pot. Add butter, milk, and salt and pepper to taste. Mash and whip until creamy.

Frying Shoestring Onions

    Prepare Onions

    Soak thinly sliced onions in buttermilk for at least 30 minutes.

    Coat and Fry

    In a separate bowl, mix flour, cornstarch, and salt. Dredge the soaked onions in the mixture. Heat oil in a frying pan, and fry the onions until golden brown and crispy. Drain on paper towels.
