    Prepare the Home Fries

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cubed potatoes and season with salt and black pepper. Cook until golden and crispy, about 15-20 minutes, stirring occasionally.

    Cook the Chorizo and Peppers

    In another skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chorizo and cook until browned, about 5 minutes. Add the sweet bell peppers and cook for an additional 3-4 minutes until the peppers are tender.

    Combine Ingredients

    Once the chorizo and peppers are cooked, add the home fries to the chorizo mixture, stirring to combine. Cook for another 2-3 minutes to let the flavors meld together.

    Fry the Eggs

    In a separate pan, fry the eggs to your desired doneness (sunny-side up, over-easy, etc.).

    Assemble the Chorizo Hash

    To serve, place a generous portion of the chorizo hash on a plate, top with a fried egg, and sprinkle cheddar cheese on top. Serve with pico de gallo on the side.
