Brisket

    Prepare the Brisket

    In a small bowl, combine smoked paprika, brown sugar, garlic powder, onion powder, salt, black pepper, and cayenne pepper to create a dry rub. Rub the mixture all over the beef brisket. Wrap in plastic wrap and refrigerate for at least 4 hours, preferably overnight.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Remove the brisket from the refrigerator and let it come to room temperature. Place the brisket in the smoker, fat side up. Smoke for about 10-12 hours, or until the internal temperature reaches 195°F (90°C).

    Rest and Slice

    Once cooked, remove the brisket from the smoker and wrap it in foil. Let it rest for at least 30 minutes before slicing thinly against the grain.

Onion Rings

    Prepare the Onions

    Slice the large onions into 1/2 inch thick rings and separate them.

    Make the Batter

    In a mixing bowl, whisk together flour, cornstarch, baking powder, and salt. Gradually add the beer until the batter reaches a smooth consistency.

    Fry the Onion Rings

    Heat oil in a deep fryer or heavy pot to 350°F (175°C). Dip the onion rings into the batter, allowing excess to drip off, then carefully place them in the hot oil. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

House Made Ranch

    Mix the Ranch Ingredients

    In a bowl, combine mayonnaise, sour cream, buttermilk, chopped dill, garlic powder, onion powder, salt, and black pepper. Whisk until well combined. Refrigerate for at least 30 minutes to let the flavors meld.

Little Heat Sauce

    Combine the Sauce Ingredients

    In a small bowl, mix together hot sauce, honey, and lime juice until well blended. Adjust seasoning to taste.

To Assemble

    Prepare the Texas Toast

    Toast the slices of Texas toast until golden brown.

    Assemble the Sandwich

    On each slice of toasted Texas toast, layer sliced brisket, pickles, two beer-battered onion rings, a generous drizzle of house-made ranch, and little heat sauce. Top with another slice of toast.
