Preparation

    Prepare the Ham

    Remove the ham from the refrigerator and let it sit at room temperature for about 30 minutes before smoking. This will help it cook more evenly.

    Create the Glaze

    In a medium bowl, combine the brown sugar, honey, Dijon mustard, black pepper, garlic powder, and smoked paprika. Mix well until it forms a smooth paste.

    Score the Ham

    Using a sharp knife, score the surface of the ham in a diamond pattern. This will allow the glaze to penetrate better.

    Apply the Glaze

    Rub the glaze all over the ham, making sure to get it into the scored cuts.

Smoking

    Prepare the Smoker

    Preheat your smoker to 225°F (107°C). Soak the wood chips in water for at least 30 minutes before adding them to the smoker.

    Add the Ham

    Place the ham in the smoker and add the soaked wood chips to the smoker box or directly onto the coals.

    Baste with Apple Juice

    Every hour, baste the ham with apple juice to keep it moist and enhance the flavor.

    Cook the Ham

    Smoke the ham for approximately 4-6 hours, or until the internal temperature reaches 140°F (60°C).

Serving

    Rest and Slice

    Once the ham reaches the desired temperature, remove it from the smoker, cover it with foil, and let it rest for 20-30 minutes before slicing.

    Slice the ham and serve it warm. Drizzle any remaining glaze over the slices for added flavor.
