Preparing the Tenderloin

Butterfly the Pork Tenderloin
Place the pork tenderloin on a clean cutting board. Using a sharp knife, slice the tenderloin horizontally, but not all the way through, and open it like a book. This is known as butterflying.

Season the Pork
Sprinkle salt, black pepper, and garlic powder evenly on both sides of the butterflied pork tenderloin. Allow it to marinate for at least 30 minutes.

Prepare the Batter
In a large bowl, combine all-purpose flour, cornstarch, baking powder, and salt. Gradually add cold water while whisking until a smooth batter forms.

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter and Fry the Tenderloin
Dip the par-smoked pork tenderloin into the batter, coating it evenly. Carefully place it in the hot oil and fry for 5-7 minutes until golden brown and crispy. Ensure the internal temperature reaches 145°F (63°C).

Drain the Tenderloin
Remove the fried tenderloin from the oil and place it on a paper towel-lined plate to drain excess oil.
Assembling the Sandwich

Prepare the Buns
Toast the sandwich buns lightly on a grill or in a toaster.

Assemble the Sandwich
Spread mayonnaise on the bottom half of each bun. Place a generous piece of the fried tenderloin on top, then add pickles and sliced onions before placing the top half of the bun.

Serve the smoked fried tenderloin sandwiches immediately with extra pickles and onions on the side.
