Preparation
Prepare the Chicken
Start by rinsing the chicken wings under cold water and patting them dry with paper towels.
Season the Wings
In a large bowl, toss the chicken wings with olive oil, salt, black pepper, garlic powder, paprika, and cayenne pepper until evenly coated.
Smoking
Prepare the Smoker
Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).
Smoke the Wings
Place the seasoned chicken wings on the smoker rack. Add the soaked wood chips to the smoker box and close the lid. Smoke the wings for 1.5 to 2 hours, or until they reach an internal temperature of 165°F (74°C).
Crisp the Wings
For extra crispiness, increase the smoker temperature to 375°F (191°C) and smoke for an additional 10-15 minutes.
Sauce (Optional)
Prepare the Sauce
In a small saucepan, melt the butter over medium heat. Stir in hot sauce and honey. Cook for 2-3 minutes until heated through.
Toss the Wings
Once the wings are done smoking, remove them from the smoker and toss them in the prepared sauce if desired.

Serve
Serve the smoked chicken wings hot with your choice of dipping sauce or enjoy them plain.
