Prepare the Pork
Trim excess fat from the pork shoulder and cut it into large chunks.

Season the Pork
In a bowl, mix together salt, black pepper, smoked paprika, brown sugar, and cayenne pepper. Rub this mixture all over the pork chunks.

Sear the Pork
In a large skillet over medium-high heat, sear the pork chunks on all sides until browned (about 5-7 minutes).

Cook the Pork
Transfer the seared pork to a slow cooker. Add chopped onion, minced garlic, apple cider vinegar, and barbecue sauce. Cook on low for 8 hours or high for 4 hours, until the meat is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Mix the shredded pork with the remaining sauce in the cooker.
Coleslaw

Prepare the Vegetables
Shred the green cabbage and carrots using a grater or food processor.

Make the Dressing
In a large bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper.

Combine Coleslaw
Add the shredded cabbage and carrots to the dressing mixture. Toss well to combine and refrigerate for 30 minutes before serving.

Assemble the Sandwiches
Toast the hamburger buns if desired. Place a generous amount of pulled pork on the bottom half of each bun, top with coleslaw, and cover with the top half of the bun. Serve immediately.
