Filling Preparation

    Mix the Filling

    In a large mixing bowl, combine the smoked pulled pork, finely shredded cabbage, grated carrots, and chopped green onions.

    Add Seasonings

    Pour in the soy sauce, rice vinegar, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Egg Roll Assembly

    Prepare Wrappers

    Lay out an egg roll wrapper on a clean, flat surface with one corner pointing towards you.

    Fill the Wrapper

    Place about 2-3 tablespoons of the filling mixture in the center of the wrapper.

    Roll the Egg Roll

    Fold the corner closest to you over the filling, then fold in the sides and roll away from you until the egg roll is sealed. Use a little water to seal the edges if necessary.

    Repeat

    Repeat the filling and rolling process for the remaining wrappers and filling.

Frying

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Egg Rolls

    Carefully lower the egg rolls into the hot oil, a few at a time, and fry for about 3-4 minutes, or until golden brown and crispy.

    Drain Excess Oil

    Remove the fried egg rolls and place them on a paper towel-lined plate to drain excess oil.

Spicy Mustard Sauce Preparation

    Mix the Sauce

    In a small bowl, combine the yellow mustard, hot sauce, and honey. Stir well until all ingredients are blended.
