Preparation of Slaw

    Make the Creamy Slaw

    In a large bowl, combine shredded cabbage, shredded carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Mix well until all ingredients are combined. Cover and refrigerate for at least 30 minutes to allow flavors to meld.

Cooking the Meats

    Prepare the Meats

    If using leftover brisket and smoked turkey, slice them into manageable pieces. If cooking fresh brisket, smoke it in a smoker until it reaches an internal temperature of 195°F (90°C) and slice thinly. Heat the sliced smoked turkey in a pan over medium heat until warmed through.

Assembling the Toast

    Toast the Bread

    Preheat a griddle or skillet over medium heat. Butter one side of each slice of Texas toast. Place the slices butter-side down on the griddle and toast until golden brown, about 3-4 minutes.

    Assemble the Sandwich

    On each slice of toasted Texas toast, layer sliced brisket and warmed smoked turkey. Top generously with the creamy slaw, followed by sliced pickles and red onion. Drizzle with spicy BBQ sauce.

    Close the sandwiches with another slice of toasted Texas toast or serve open-faced. Serve immediately while hot.
