Method
For the Fried Zucchini
- 1
Prepare the Zucchini
Wash and dry the zucchini. Cut off the ends and slice them into thin strips, about 1/4 inch thick.
- 2
- 3
Batter the Zucchini
Take a zucchini strip, dip it into the flour mixture, shaking off the excess, then dip it into the beaten eggs, and finally coat it with breadcrumbs. Make sure each strip is well coated.
- 4
Heat the Oil
In a large skillet or deep frying pan, heat the vegetable oil over medium-high heat. The oil should be hot enough that a breadcrumb sizzles when dropped in.
- 5
Fry the Zucchini
Carefully place the battered zucchini strips in the hot oil, making sure not to overcrowd the pan. Fry for about 2-3 minutes on each side or until golden brown and crispy.
- 6
Drain and Serve
Once fried, remove the zucchini strips with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve hot.
For the Garlic Parmesan Sauce
- 7
Prepare the Sauce
In a mixing bowl, combine the mayonnaise, minced garlic cloves, grated Parmesan cheese, lemon juice, salt, and black pepper.
- 8
Mix Well
Using a whisk or a fork, mix all the ingredients together until smooth and well combined.
- 9
Chill and Serve
Cover the sauce and refrigerate for at least 30 minutes before serving to allow flavors to meld.
