Preparing the Fried Green Tomatoes

Slice the Tomatoes
Wash and slice the green tomatoes into 1/4-inch thick slices.

Prepare Breading Stations
Set up a dredging station with three shallow bowls: one with flour mixed with salt and pepper, one with buttermilk, and one with cornmeal.

Bread the Tomatoes
Dip each tomato slice into the flour, then the buttermilk, and finally coat with cornmeal. Shake off excess cornmeal.

Fry the Tomatoes
In a large skillet, heat vegetable oil over medium-high heat. Once hot, fry the breaded tomato slices in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.
Making the Chipotle Mayo

Combine Ingredients
In a bowl, mix together mayonnaise, chipotle peppers, lime juice, and garlic powder until well blended.

Taste and Adjust
Taste the chipotle mayo and adjust seasoning with salt or additional lime juice if desired.
Assembling the Sandwich

Cook the Bacon
In a skillet, cook the bacon slices over medium heat until crispy. Drain on paper towels.

Grill the Texas Toast
In the same skillet, toast the Texas toast slices until golden brown on both sides.

Build the Sandwich
Spread a generous amount of chipotle mayo on one side of each slice of Texas toast. Layer with lettuce leaves, fried green tomatoes, and crispy bacon. Top with another slice of Texas toast, mayo side down.

Slice the sandwich in half and serve immediately with extra chipotle mayo on the side if desired.
