    Wash the Russet potatoes thoroughly. Using a sharp knife or a mandoline slicer, slice the potatoes into thin rounds, about 1/16 inch thick. Aim for uniform thickness for even cooking.

    Place the sliced potatoes in a large bowl of cold water. Let them soak for at least 30 minutes to remove excess starch, which helps in achieving crispiness.

    Drain the soaked potatoes and pat them dry with a clean kitchen towel or paper towels to remove moisture.
